- 2 cups black beans
- 1 ham bone
- 1 stalk celery
- parsley
- 4 tablespoons butter
- 1 onion, sliced thin
- 2 quarts water
- 14 cup sherry wine
Directions

1Soak the beans overnight in water to cover.

2Drain and cover with 2 qts.

4Add ham bone.

5Add sliced onion, parsley, and celery to taste.

6Simmer 3 1/2 to 4 hours in a covered pot, until soft.

7Rub the beans and liquid through a sieve.

8Reheat, add butter, pepper and salt to taste.
