Black Bean Soup

  • 2 cups black beans
  • 1 ham bone
  • 1 stalk celery
  • parsley
  • 4 tablespoons butter
  • 1 onion, sliced thin
  • 2 quarts water
  • 14 cup sherry wine

Directions

    Soak the beans overnight in water to cover.

    Drain and cover with 2 qts.

    fresh water.

    Add ham bone.

    Add sliced onion, parsley, and celery to taste.

    Simmer 3 1/2 to 4 hours in a covered pot, until soft.

    Rub the beans and liquid through a sieve.

    Reheat, add butter, pepper and salt to taste.

    Stir in sherry.
