  • 1 c. black beans
  • 1 1/2 qt. water
  • 2 whole cloves
  • 1 bay leaf
  • 2 cloves garlic
  • 2 stalks celery
  • 1 carrot, chopped
  • 1 onion, chopped
  • 2 c. beef broth
  • 1 Tbsp. flour
  • 2 Tbsp. melted butter
  • 1 to 2 Tbsp. sherry wine
  • slice of lemon

    Soak the beans overnight; drain.

    Add the water.

    Add the cloves, bay leaf, garlic, celery, carrot and onion.

    Cook slowly for 3 hours.

    Mash beans.

    Add the beef broth.

    Combine the flour and melted butter; add to soup.

    Add the sherry wine to taste. Adjust seasoning.

    Serve with slice of lemon.
