Black Bean Soup

- 1 c. black beans
- 1 1/2 qt. water
- 2 whole cloves
- 1 bay leaf
- 2 cloves garlic
- 2 stalks celery
- 1 carrot, chopped
- 1 onion, chopped
- 2 c. beef broth
- 1 Tbsp. flour
- 2 Tbsp. melted butter
- 1 to 2 Tbsp. sherry wine
- slice of lemon
Directions

1Soak the beans overnight; drain.

2Add the water.

3Add the cloves, bay leaf, garlic, celery, carrot and onion.

4Cook slowly for 3 hours.

5Mash beans.

6Add the beef broth.

7Combine the flour and melted butter; add to soup.

8Add the sherry wine to taste. Adjust seasoning.

9Serve with slice of lemon.
