- 2 lb. black beans (Turtle Beans)
- 24 chicken bouillon cubes
- 1 1/2 gal. hot water
- 1 1/2 lb. smoked ham hocks
- 4 c. chopped onions
- 3 1/2 c. finely chopped green peppers
- 6 Tbsp. vegetable oil
- 2 1/4 tsp. ground cumin
- 1 1/2 tsp. dried oregano
- 1 1/2 tsp. crushed red peppers
- 3 garlic cloves, pressed through garlic press
- 1/2 tsp. red wine vinegar
- 2 c. rice (uncooked)
Directions

1Clean beans, soak overnight in water to cover (drain).

2Make chicken stock by dissolving bouillon cubes in 1 1/2 gallons hot water, in a 5 gallon pot.

3Add drained beans and ham shank.

4Bring to boil, reduce heat to medium and cook until beans are tender, about 1 1/2 hours.
