Black Bean Soup

  • 2 lb. black beans (Turtle Beans)
  • 24 chicken bouillon cubes
  • 1 1/2 gal. hot water
  • 1 1/2 lb. smoked ham hocks
  • 4 c. chopped onions
  • 3 1/2 c. finely chopped green peppers
  • 6 Tbsp. vegetable oil
  • 2 1/4 tsp. ground cumin
  • 1 1/2 tsp. dried oregano
  • 1 1/2 tsp. crushed red peppers
  • 3 garlic cloves, pressed through garlic press
  • 1/2 tsp. red wine vinegar
  • 2 c. rice (uncooked)

Directions

    Clean beans, soak overnight in water to cover (drain).

    Make chicken stock by dissolving bouillon cubes in 1 1/2 gallons hot water, in a 5 gallon pot.

    Add drained beans and ham shank.

    Bring to boil, reduce heat to medium and cook until beans are tender, about 1 1/2 hours.
