Black Bean Soup

  • 3 lb. black beans
  • 5 ancho peppers (chili peppers)
  • 3 oz. cumin
  • 6 cloves garlic
  • 3 onions
  • 1 bunch cilantro
  • black pepper to taste
  • 5 beef bouillon cubes

Directions

    Rinse beans, discarding any shriveled beans.

    Soak in cold water.

    Cook 2 hours or until soft.

    Remove seeds from peppers and place peppers in boiling water 15 minutes.

    Grind together peppers, onions, garlic and cilantro and saute.

    Blend cooked beans in blender or food processor in small batches.

    Add bouillon cubes and black pepper.

    Simmer for 1 hour, stirring often.
