Black Bean Soup

Ingredients
- 2 c. dried black beans or 3 cans black beans
- 2 onions, chopped
- 2 cloves garlic, chopped
- 1 qt. water
- 3 beef bouillon cubes
- 1/8 tsp. ground cumin
- 1/8 tsp. black pepper
- 1 bay leaf
- 1/2 tsp. oregano
- salt to taste
Directions

1If using dry beans, pick out broken beans and tiny stones. Wash well.

2Cover with water and bring to boil for 5 minutes.

3Pour off this water, add 1 quart of water and reheat.

4In nonstick skillet, spray with cooking spray and saute onions and garlic until just limp.

5Add all ingredients to beans and cook slowly until beans are done.

6You may need to add more water.

7Serve over white rice and top with chopped onions.

8Serves two generously or add salad and serve four.
