- 1/2 c. red pepper
- 1/2 c. celery
- 1/2 c. carrot
- 3/4 c. onion
- 1/4 c. mushrooms
- 2 cans black beans
- 3 bouillon cubes
- dark beef stock
- 1 can tomatoes
- 4 cloves garlic
- Cajun seasoning mix
Directions

1Make a dark roux (1/4 cup flour and 1/4 cup oil).

2When dark, add finely chopped red pepper, celery, carrot, onion and mushrooms.

3Cook until just done, then add black beans, bouillon cubes, dark stock, tomatoes, garlic, salt and Cajun seasoning to taste.
