- 6 c. chicken broth
- 1 c. Minute rice
- juice of 2 lemons
- 3 eggs, separated
- salt and pepper to taste
Directions

1Boil broth.

2Add rice, salt and pepper.

3When rice is cooked, lower to simmer.

4In mixing bowl, put 3 egg whites and beat until fluffy.

5Add yolks.

6Add lemon slowly, beating well.

7Add broth, a little at a time, until most is used.

8Pour back into pot, stirring well.
