- 1 lb. dry black beans
- 10 c. water
- 2/3 c. olive oil
- 4 cloves garlic
- 1 large green pepper
- 4 tsp. salt
- 1/2 tsp. pepper
- 1 bay leaf
- 2 Tbsp. vinegar
- 2 Tbsp. dry white wine
- 1 large onion
- 2 Tbsp. sugar
- 1/4 tsp. oregano
Directions

1Wash beans and soak in water overnight (at least 12 hours). Cook over medium heat for about 1 hour in deep pot.

2Chop onion, garlic and green pepper.

3Saute all 3 in frying pan with olive oil until tender, then add to beans.

4Add salt, pepper, oregano, bay leaf and sugar.

5Cook over low heat for an additional 1 hour.

6Add vinegar and white wine.

7Simmer for 1 hour or until tender and desired thickness.

8Serve over white rice and sprinkle with chopped onions.
