- 12 oz. pkg. black beans
- 1 medium onion, finely chopped
- 1 medium bell pepper, finely chopped
- 4 sections garlic, finely chopped
- 3/4 c. olive oil
- 2 tsp. oregano
- 3 bay leaves
- salt and pepper
Directions

1Wash and soak black beans overnight.

2Drain and add fresh water about 5 inches over beans.

3Add finely chopped onion, bell pepper and garlic, olive oil, oregano, bay leaves, salt and pepper.

4Cook on low heat slowly so no added water is necessary. Great as soup or goes well with picadilo and yellow rice.
