Black Beans Over Rice

- 3 Tablespoons Olive Oil
- 1/2 whole Large Onion, Chopped
- 2 teaspoons Minced Garlic
- 1 Tablespoon Pickled Jalapeno Peppers, Diced (store Bought Or See My Recipe Box)
- 1 Tablespoon Chili Powder
- 1 teaspoon Cumin
- 1/2 teaspoons Salt
- 1/2 teaspoons Pepper
- 1 can (15 Oz. Size) Black Beans, Drained
- 1 can (12 1/2 Oz. Size) Chicken Breast Chunks (or Sub Up To 2 Cups Leftover Chopped Cooked Chicken Or Turkey For The Can)
- 1-1/2 cup Rice
- 1 whole Medium Tomato, Chopped
- 2 stalks Cilantro, Chopped
Directions

1In a medium saucepan over low heat, saute onions and garlic in olive oil for 3-5 minutes. Add jalapeno peppers, chili powder, cumin, salt and pepper. Stir and cook for 2-3 more minutes. Next add the beans and chicken. Simmer for 30 minutes.

2Prepare rice according to package directions.

3Serve the rice with beans on top. Top with tomatoes and cilantro. This recipe has lovely flavor but is not too spicy for my kids.
