- 1 c. rice
- 3 Tbsp. lightly salted butter
- 3 c. chicken stock
- 1/2 c. finely chopped onion
- 1 c. chopped pimiento
Directions

1Saute rice in butter for 3 to 4 minutes, stirring often until golden.

2Stir in stock, onion and pimiento.

3Simmer, covered, 30 minutes until rice is tender and liquid absorbed.

4Serves 4 to 6.
