Black Walnut Fruit Cake

  • 1 c. black walnuts
  • 1 c. raisins, chopped
  • 1 (3 1/2 oz.) can coconut
  • 1 1/2 c. sugar
  • 1 c. butter
  • 1 c. blackberry jam or apple butter
  • 2 eggs, well beaten
  • 3 c. flour
  • 1 tsp. baking soda
  • 1 Tbsp. allspice
  • 1 c. buttermilk

Directions

    Cream together sugar, butter and jam.

    Add eggs, one at a time, beating well after each addition.

    Stir dry ingredients.

    Add to creamed mixture alternately with buttermilk.

    Fold in nuts, raisins and coconut.

    Pour into 9-inch tube pan and bake 1 hour at 350°.
