- 2 c. flour
- 1/2 c. sugar
- 1 c. milk
- 4 tsp. baking powder
- 4 Tbsp. butter, melted
- 1 egg
- 1 c. blackberries
Directions

1Sprinkle berries with little of flour.

2Add remaining flour with other dry ingredients; melt butter and combine with milk and beaten egg yolk.

3Mix dry and liquid mixtures quickly and fold in stiffly beaten egg white.

4Drop by spoonfuls into greased muffin tins.

5Bake 15 to 20 minutes.

6Yields 12 to 15 muffins.
