Blackeye Bean Salad

- 1 liter water
- 1 pinch of salt
- 250 grams of dried blackeye beans
- 3 tbsp olive oil
- 2 tbsp white wine vinegar
- 1 medium onion (roughly chopped)
- 1 green pepper (roughly chopped)
- 1 bunch of coriander (chopped)
Directions

1Soak the beans in water 24 hours before cooking to soften them.

2To cook, drain and add the beans to the fresh water in the pan with salt.

3boil for about 30-35 minutes

4Once cooked, drain from the water.

5Add the olive oil, vinegar, onion, green pepper, coriander and mix well (add more if not to your taste).
