Ingredients
- 8 large ripe tomatoes, peeled, seeded and chopped
- 1 clove garlic, minced
- 2 small onions, chopped
- 1 green pepper, seeded and chopped
- 2 large cucumbers, peeled (if waxed) and chopped
- 1/3 c. olive oil
- 1/4 c. cider vinegar
- juice of 1 lemon
- 1 Tbsp. Angostura Aromatic Bitters
- fresh ground pepper
- 1/2 c. sliced scallions for garnish
Directions

1Puree tomatoes in blender.

2Place in large bowl.

3Combine remaining ingredients.

4Ladle the mixture (about 2 cups at a time) into blender and blend until smooth.

5Combine with tomato puree. Chill.

6Serve very cold.

7Sprinkle with garnish.
