Ingredients

  • 8 large ripe tomatoes, peeled, seeded and chopped
  • 1 clove garlic, minced
  • 2 small onions, chopped
  • 1 green pepper, seeded and chopped
  • 2 large cucumbers, peeled (if waxed) and chopped
  • 1/3 c. olive oil
  • 1/4 c. cider vinegar
  • juice of 1 lemon
  • 1 Tbsp. Angostura Aromatic Bitters
  • fresh ground pepper
  • 1/2 c. sliced scallions for garnish

Directions

    Puree tomatoes in blender.

    Place in large bowl.

    Combine remaining ingredients.

    Ladle the mixture (about 2 cups at a time) into blender and blend until smooth.

    Combine with tomato puree. Chill.

    Serve very cold.

    Sprinkle with garnish.
