  • 3/4 cups Buttermilk
  • 1 cup Milk
  • 1- 3/4 cup Flour
  • 13 teaspoons Salt
  • 1/2 Tablespoons Butter, Or More As Needed

    Whisk together the eggs, buttermilk and milk for 3-4 minutes.

    Whisk in flour and salt.

    Heat a non-stick skillet over medium heat.

    Coat the bottom of the skillet with the butter.

    Using 1 tablespoon of batter per blini, drop as many as can fit in your skillet without them touching.

    Cook each blini for about 2 minutes on one side, then 30 seconds to 1 minute on the other side.

    You do not need to butter the skillet again for each new batch.

    If you see the last batch is a bit too browned, add a bit of butter to the skillet.

    Serve warm or reheat in a preheated oven for 5 minutes before serving.
