Blt Salad

Ingredients

  • 1 tbsp olive oil + 2 tsp
  • 4 slices bacon, chopped
  • 4 slices bread, crusts removed, cubed
  • 2 heads baby romaine lettuce, leaves separated
  • 1/2 lb cherry tomatoes, halved
  • 4 None hard-boiled eggs, peeled, halved
  • 2/3 cup fresh chives, chopped
  • None None FOR THE DRESSING
  • 2 tbsp olive oil
  • 1 None shallot, finely chopped
  • 1 tbsp white wine vinegar
  • 1 tbsp Dijon mustard

Directions

    Heat 1 tbsp oil in a large frying pan over high heat. Saute bacon for 3-4 mins, until crisp. Transfer to a plate and keep warm.

    Add remaining oil and toast croutons, turning, for 2-3 mins, until golden and crisp. Set aside.

    Combine lettuce, bacon, croutons, tomatoes, eggs and chives.

    To make the dressing, whisk together all ingredients. Season. Drizzle over salad and toss to combine.
