  • 2 c. flour
  • 3 Tbsp. sugar
  • 1 Tbsp. baking powder
  • 1/4 tsp. salt
  • 1 c. Blue cheese, crumbled
  • 1 egg, beaten
  • 1 c. milk
  • 1/4 c. butter, melted

    Preheat oven to 400°.

    Butter 2 1/2-inch muffin cups.

    In large bowl, combine flour, sugar, baking powder, salt and cheese.

    In small bowl, combine egg, milk and butter until blended.

    Stir into flour mixture just until moistened.

    Spoon into muffin cups, filling 3/4 full.

    Bake 20 to 25 minutes or until golden brown. Remove from pan; serve warm.
