  • 1 c. blue or yellow cornmeal
  • 1/2 c. flour (all-purpose)
  • 1 Tbsp. sugar
  • 2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1 c. buttermilk
  • 2 eggs, separated and whites whipped stiffly
  • 1/4 c. plain yogurt

    Mix dry ingredients.

    Stir buttermilk into egg yolks and yogurt.

    Stir in melted butter and mix with dry ingredients.

    Fold in beaten egg whites.

    Serve with 1 tablespoon honey pecan butter and warmed maple syrup.
