  • 1/2 c. sugar
  • 1/2 tsp. lemon extract
  • 1 egg
  • 1/2 c. milk
  • 1 1/2 c. sifted flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. blueberries, slightly floured

    Cream shortening; add sugar and flavoring.

    Beat until fluffy.

    Add egg; beat well.

    Add milk alternately with mixed and sifted dry ingredients; beat until smooth.

    Fold in floured blueberries. Turn into greased and paper-lined 8 x 8 x 2-inch pan and bake in moderate oven, 375°, for 40 minutes.
