Blueberry Cottage Pudding

  • 1 3/4 c. sifted flour
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 c. shortening
  • 1 c. sugar
  • 1 egg
  • 1 tsp. vanilla
  • 2/3 c. milk
  • 1 c. fresh or frozen blueberries

    Sift flour, baking powder and salt together.

    Cream shortening and add sugar gradually.

    Beat in egg and vanilla. Alternately add flour and milk to sugar mixture, beating after each addition until smooth.

    Add 1 cup blueberries; mix.

    Pour into 8 x 8 x 2-inch greased pan.

    Bake in moderate oven (350°) for 30 to 45 minutes.
