- 2 12 cups fresh blueberries
- 12 cup sugar
- 34 cup water
- 1 teaspoon finely grated lemon rind
- 1 tablespoon lemon juice
Directions

1Combine blueberries and sugar in a food processor and blend until smooth.

2Strain through a sieve, stirring with a spoon to extract the pulp and juice.

3Discard seeds.

4Add water and lemon rind and juice to blueberry puree.

5Pour mixture into a shallow dish or pie plate.

6Place in freezer and freeze 8 hours or overnight.

7Scrape with a fork until mixture is like shaved ice.
