  • 1/2 c. magarine (I Can't Believe It's Not Butter)
  • 1 1/4 c. sugar
  • 2 eggs
  • 1/2 c. milk
  • 2 c. flour
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 2 c. blueberries
  • 2 tsp. sugar (for topping)
  • 1 tsp. vanilla

Directions

    Preheat oven to 375°.

    Cream margarine and sugar until fluffy. Add eggs, one at a time.

    Mix well.

    Combine flour, salt and baking powder; add to creamed mixture alternately with milk and vanilla and beat well.

    Fold in blueberries that have been lightly in flour.

    Grease muffin pan or use paper cups.

    Fill three quarters full.

    Sprinkle a little sugar on each muffin.

    Bake at 375° for 25 to 30 minutes.
