Blueberry Pound Cake

- 1 lb. soft butter
- 2 c. sugar
- 8 large eggs
- 4 c. flour
- 4 c. blueberries
- 4 Tbsp. minced lemon rind
Directions

1Preheat oven to 300°.

2Lightly butter 2 loaf pans or tube pan. In a large bowl, cream the butter and sugar until fluffy.

3Beat in eggs one at a time.

4Gently fold in all but 3 tablespoons of flour 1/4 cup at a time.

5Toss blueberries with lemon rind and remaining flour.

6Fold into batter and pour into pan(s).

7Bake 1 hour and 30 to 50 minutes, depending on pan size.

8Cool completely before unmolding.

9Let stand overnight before serving.

10Can be prepared several days ahead and can be frozen.
