    Skin the bluefish, (no need to scale it if you remove the skin) cut the filets down to the back bone.

    Place the filets on a broiler pan lined with lettuce leaves.

    Baste the filets with a mayonaise based salad dressing (creamy cucumber works well).

    Add in salt and pepper.

    Broil for approximately 10 min, or possibly till the fish is just turning light brown.
