  • 1/4 c. butter, melted
  • 1/2 c. dry bread crumbs
  • 1/3 c. grated Parmesan cheese
  • 2 Tbsp. minced fresh parsley
  • 1 tsp. salt
  • 1/2 tsp. paprika
  • 1/4 tsp. oregano
  • 1/4 tsp. basil
  • 1/4 tsp. pepper
  • 1 lb. bluegill fillets

    Place butter in a shallow dish. In another dish, combine bread crumbs, Parmesan cheese and seasonings. Dip fillets in butter, then coat with crumb mixture. Bake at 350° for 20 minutes, uncovered, or until fish flakes easily with a fork.
