- 6 chicken breasts
- 1 onion, chopped
- 5 garlic cloves, minced
- 2 serrano chilies, minced
- 1 bunch fresh cilantro
- 6 cups swansons chicken broth
- 14 teaspoon cumin
- 18 teaspoon salt
- 18 teaspoon black pepper
- 5 tablespoons olive oil
- 3 cups raw rice
- 1 cup frozen peas
- 1 cup frozen corn
Directions

1in a blender, blend cilantro leaves, chicken broth, cumin, salt and pepper.

2set aside.

3in large pot, fry chicken breast pieces in 5 tbl.

4olive oil until lightly browned.

5take out and set aside.

6add 1 tbl.

7olive oil and add onions, garlic, chilies and fry until lightly browned.

8turn off flame.

9add raw rice, peas, corn and stir.

10place chicken pieces on top.

11add the blended cilantro mixture into pot and bring to a boil.

12lower heat to simmer, cover and cook for 20 minutes.

13remove from heat, let sit for 20 more minutes.

14do not lift lid.

15then stir with fork to fluff and serve.
