- 3 Tbsp. olive oil
- 3/4 c. white wine
- 2 tsp. garlic, minced
- 12 mussels, cleaned and scrubbed
- 1/4 c. plum tomatoes, finely chopped
- 1 Tbsp. fresh basil, chopped
- 1/2 tsp. red pepper flakes
Directions

1In skillet, heat oil over medium heat.

2Add white wine, garlic and mussels.

3Cover and cook until mussels are opened, 2 to 3 minutes.

4Stir in tomato, basil and red pepper flakes.

5Reduce heat; simmer 2 minutes more.
