  • 454 grams sultanas
  • 227 grams butter or Margarine
  • 3 eggs
  • 3 cups flour
  • 1/2 teaspoon baking powder
  • lemon
  • 1/4 cup sugar

    Boil Sultanas in just enough water to cover for 8 minutes.

    Strain off water and cut butter into hot sultanas

    Beat in eggs and sugar.

    Sift in dry ingredients and add essence.
  5. 5
    Bake in a slow oven (300 - 325 F) 150 - 160 C for 1, 1/2 hours or until cooked in centre.
