  • 1 lb. ground beef
  • 1 c. each: chopped onion and green pepper
  • 1 (14 1/2 to 16 oz.) can tomatoes
  • 1 tsp. each: salt and chili powder
  • 3 c. cooked rice
  • 4 c. shredded cabbage (1/2 lb.)
  • 1/2 c. sour cream
  • 1 c. grated Monterey Jack cheese

Directions

    Saute beef, onion and green pepper until meat is browned; drain. Stir in tomatoes, seasonings, rice and cabbage.

    Cover and cook for 10 to 15 minutes or until cabbage is tender. Stir in sour cream. Sprinkle cheese over top of rice/meat mixture and allow cheese to melt, about 2 to 3 minutes.
