Braised Fresh Cucumbers

  • 4 cucumbers, pared and thinly sliced
  • 2 tsp. salt
  • 3 bacon slices, diced
  • 1 tsp. sugar
  • 1/4 tsp. non-caloric liquid sweetener
  • 1/8 tsp. pepper
  • 1 Tbsp. cider vinegar

Directions

    Layer cucumbers in small bowl; sprinkle with salt. Refrigerate, covered, for 30 minutes.

    Saute bacon in large skillet until crisp; drain well.

    Add cucumbers, drained thoroughly, and remaining ingredients.
