Ingredients

  • 3 Tbsp. olive oil
  • 1/2 c. chopped onion
  • 1 clove garlic, minced
  • 1 lb. fresh green beans, washed and tips removed
  • 1 c. canned tomatoes
  • 1 Tbsp. tomato paste
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. oregano
  • 1/2 c. water (approximately)

Directions

    Heat oil in heavy saucepan.

    Add onion and garlic.

    Cook until golden.

    Add remaining ingredients.

    Juices should just cover beans in pan.

    If not, add a little more water.

    Cover. Cook over low heat for 45 minutes or until fork-tender.

    Serve with pan juices.
