- 2 Tbsp. olive oil
- 1 1/2 lb. green beans, tips cut off and sliced in half lengthwise
- 4 green onions, finely chopped
- 1/2 c. finely chopped parsley
- 1 c. Italian canned tomatoes
- salt and pepper
Directions

1Pour the oil into the bottom of a heavy saucepan and add the beans, onions, parsley, tomatoes, salt and pepper.

2Cover and simmer slowly for 20 to 30 minutes or until beans are tender. Serves 6.
