Braised Green Beans

  • 2 Tbsp. olive oil
  • 1 1/2 lb. green beans, tips cut off and sliced in half lengthwise
  • 4 green onions, finely chopped
  • 1/2 c. finely chopped parsley
  • 1 c. Italian canned tomatoes
  • salt and pepper

Directions

    Pour the oil into the bottom of a heavy saucepan and add the beans, onions, parsley, tomatoes, salt and pepper.

    Cover and simmer slowly for 20 to 30 minutes or until beans are tender. Serves 6.
