Braised Red Cabbage And Apples

- 4 Tbsp. bacon grease
- 2 Tbsp. sugar
- 1 onion, chopped
- 2 lb. shredded red cabbage
- 1 tart apple, thinly sliced
- 2 Tbsp. cider vinegar
- 1/2 tsp. caraway seed
- 1/4 tsp. nutmeg
- 1/2 c. dry red wine
- 1/2 c. water
- 1/8 tsp. cayenne pepper
- salt
Directions

1Melt bacon grease in a large skillet; add sugar and cook, stirring, for 2 minutes.

2Add onions and cook slowly until lightly colored.

3Stir in cabbage, apples, vinegar, wine and spices.

4Cook over low heat, covered, for 10 minutes, then add water and cook, with cover askew, stirring occasionally, for 30 to 40 minutes. Add salt to taste.

5Serve either hot or cold.
