- 1 1/4 c. all-purpose flour
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 1/2 c. sugar
- 1/2 c. bran cereal (not flakes)
- 1 1/4 c. whole milk
- 1 egg
- 1/4 c. vegetable oil or substitute 1/4 c. applesauce
Directions

1Grease muffin pans.

2Preheat oven to 400°.

3In a small bowl, stir together the first four ingredients.

4In a large bowl, stir together the cereal and milk.

5Let stand for 2 minutes.

6Add egg and oil; stir.

7Add flour mixture, 1/3 at a time.

8Blend between each addition.

9Do not beat.
-
10Fill muffin cups 3/4 full.

11Bake for 18 to 20 minutes or until a toothpick comes out clean.
