  • 7 oz. (3 1/2 c.) Raisin Bran
  • 1 1/4 c. sugar
  • 2 1/2 c. flour
  • 2 1/2 tsp. soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 1/2 c. oil
  • 2 eggs, beaten
  • 2 c. buttermilk

Directions

    Place sugar, flour, soda, salt and cinnamon in a large bowl; blend.

    Stir in Raisin Bran. Stir in by hand the oil, eggs and buttermilk. Fill muffin cups 2/3 full. Bake at 400° for 15 minutes. Bake what you need and keep the rest in covered bowl in refrigerator. Spoon out as needed. Do not stir batter if you refrigerate it.
