  • 1 cup wheat bran
  • 1 1/2 cups ww flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 cup almond milk
  • 1/2 cup honey/agave
  • 1 cup applesauce
  • 2 eggs, beaten
  • *Optional add-ins: 1/4 cup raisins/craisins & 1/4 cup chopped nuts, 1/2 cup chocolate chips, or 1/2 cup blueberries

    Preheat oven to 400. Mix wet ingredients separately, mix dry ingredients separately, add wet to dry and stir until just moistened. Fold in add-ins. Spoon into greased/paper muffin tins and bake for 12-15 minutes.
