Brazil Nut Cake

- 1 1/2 c. Brazil nuts
- 1 lb. pitted dates
- 1 c. drained maraschino cherries
- 3/4 c. flour, sifted
- 3/4 c. sugar
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 tsp. vanilla
Directions

1Preheat oven to 300°.

2Grease a 9 x 5 x 3-inch loaf pan and line with wax paper.

3Combine nuts, dates and cherries in a large bowl.

4Sift together flour, sugar, baking powder and salt.

5Add to nut mixture.

6Mix well to coat nuts and fruit and to distribute flour evenly.

7Beat eggs until foamy.

8Beat in vanilla.
-
9Add to nut mixture and stir well.

10Turn into pan and spread evenly. Bake 1 hour 45 minutes.

11Cool on rack 10 or 15 minutes.

12Remove from pan and peel off paper.
-
13Cake must be cold before slicing. Makes 3 pound cake.
