  • 1 1/2 c. Brazil nuts
  • 1 lb. pitted dates
  • 1 c. drained maraschino cherries
  • 3/4 c. flour, sifted
  • 3/4 c. sugar
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. vanilla

    Preheat oven to 300°.

    Grease a 9 x 5 x 3-inch loaf pan and line with wax paper.

    Combine nuts, dates and cherries in a large bowl.

    Sift together flour, sugar, baking powder and salt.

    Add to nut mixture.

    Mix well to coat nuts and fruit and to distribute flour evenly.

    Beat eggs until foamy.

    Beat in vanilla.

    Add to nut mixture and stir well.

    Turn into pan and spread evenly. Bake 1 hour 45 minutes.

    Cool on rack 10 or 15 minutes.

    Remove from pan and peel off paper.

    Cake must be cold before slicing. Makes 3 pound cake.
