- 2 whole chicken breasts, halved
- 1 egg
- 1 tsp. Dijon mustard
- 2 Tbsp. milk
- 2 c. soft bread crumbs
- 1/2 c. Parmesan cheese
- 3/4 c. flour
- 1/8 tsp. pepper (black)
- 1/2 tsp. salt
- cooking oil
Directions

1Pound chicken breast halves to 1/4-inch thick between Saran Wrap using rolling pin.

2Mix egg, mustard and milk in bowl with fork; set aside.

3Mix bread crumbs and Parmesan cheese in bowl with fork. Set aside.

4Mix flour, salt and pepper in bowl with fork.

5Set aside.

6Dip chicken pieces first in flour mixture, then in egg mixture, then in bread crumb mixture.

7Place chicken on platter in refrigerator for 1 hour.

8Heat 3/4-inch oil in electric frypan at 350° for 5 minutes.

9Remove chicken from refrigerator. Cook in oil until brown on both sides (approximately 5 minutes on each side).

10Drain on paper towel and serve.
