  • 1/2 cup seasoned bread crumbs
  • 1 Tbsp. finely chopped green onion
  • 1 Tbsp. grated parmesan cheese
  • 1 tsp. salt
  • 1 tsp. Italian seasoning
  • 1/4 cup milk
  • 4 medium tomatoes sliced
  • 2 Tbsp. olive oil or vegetable oil
  • 1/3 to 1/2 cup shredded mozzarella cheese

Directions

    In a shallow bowl, combine the bread crumbs, onion, parmesan cheese, salt and Italian seasoning; mix well.

    Place milk in another bowl.

    Dip tomato slices in milk, then coat with crumb mixture.

    In a large skillet, heat oil.

    Fry tomatoes slices for 2 minutes on each side until golden brown.

    Sprinkle with mozzarella cheese. Serves 6.
