  • 6 baked potatoes
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 2 c. ham cubes
  • 1 doz. eggs
  • 2 c. grated cheese

Directions

    Cut up the potatoes and brown in a little oil.

    Put in a 9 x 13-inch pan. Saute the onion and green pepper.

    Place on top of the potatoes.

    Cut up the ham.

    Place on top of previous layers. Scramble the eggs, softly; don't cook dry, leave moist.

    Place on top of ham.

    Sprinkle the cheese on top. Refrigerate 12 hours or overnight. Bake at 325° for 45 minutes.
