- 6 baked potatoes
- 1 onion, chopped
- 1 green pepper, chopped
- 2 c. ham cubes
- 1 doz. eggs
- 2 c. grated cheese
Directions

1Cut up the potatoes and brown in a little oil.

2Put in a 9 x 13-inch pan. Saute the onion and green pepper.

3Place on top of the potatoes.

4Cut up the ham.

5Place on top of previous layers. Scramble the eggs, softly; don't cook dry, leave moist.

6Place on top of ham.

7Sprinkle the cheese on top. Refrigerate 12 hours or overnight. Bake at 325° for 45 minutes.
