- 1 packages Bagel thins - I used the everything bagels
- 4 Eggs
- 2 cup Milk
- 4 Tblsp. Butter or bacon grease
- 4 Tblsp. Flour
- 1 tsp Salt
- 1/2 tsp Pepper
Directions

1For the gravy:

2Melt the butter in a saucepan.

3Sprinkle in the flour and whisk until blended.

4Add salt and pepper and pour in the milk.

5Whisk until blended and starts to thicken.

6Toast your bagels.

7Fry eggs to your preference.

8I like mine sunny side up.

9Place the bottom of the bagel on serving dish, pour gravy over and top with egg.

10Put your bagel top slightly to the side of the egg.

11I topped mine with diced tomatoes and jalapeno peppers.
