- 1/4 lb. bulk chorizo sausage
- 2 Tbsp. chopped green pepper
- 2 Tbsp. milk
- 1 Tbsp. butter
- 1 tomato, peeled, seeded and chopped
- Burrito Sauce or mild salsa, warmed
- 2 Tbsp. chopped onion
- 2 eggs
- black pepper
- 4 (6-inch) tortillas
- 1/2 c. shredded Cheddar cheese
Directions

1Cook sausage, onion and green pepper until done.

2Drain.

3Beat eggs, milk and black pepper together.

4Melt butter in skillet. Add egg mixture.

5Cook, without stirring, until eggs begin to set on bottom and around edges.

6Using spatula, lift and fold partially cooked eggs so uncooked egg flows underneath.

7Cook until done.

8Remove from heat.
