Ingredients
- 1 c. hash brown potato mix (with onions)
- 2 c. hot water
- 6 (8-inch) flour tortillas
- 6 eggs, well beaten
- 1/2 lb. bulk pork sausage, cooked, crumbled and drained
- 1/2 tsp. salt
- pepper to taste
- 2 Tbsp. butter or margarine
- 3/4 c. shredded Cheddar cheese
- picante sauce (optional)
Directions

1Combine hash brown mix and water.

2Stir well and let stand covered for 15 minutes; drain.

3Wrap tortillas securely in aluminum foil.

4Bake at 350° for 10 minutes or until thoroughly heated. Combine hash browns, eggs, sausage, salt and pepper; stir well. Melt butter in a large skillet.

5Add egg mixture; cook over low heat, stirring gently until eggs are set.

6Fill each tortilla with 1/2 cup egg mixture.

7Sprinkle with cheese.

8Roll up, placing seam side down.
