- 2 cups Simply Potatoes Diced Potatoes with Onion
- 12 slices cooked turkey bacon
- 12 large eggs
- 1 cup sharp cheddar cheese, shredded
- 14 cup sun-dried tomato
- 2 cups fresh spinach or 2 cups frozen chopped spinach
- 1 cup sliced mushrooms
- 12 teaspoon salt
- 14 teaspoon pepper
- 6 dashes hot sauce
- cooking spray
Directions

1Coat a 9x11 glass baking dish with cooking spray.

2Preheat oven to 325 degrees.

3Pour Simply Potatoes Diced Potatoes with Onions in baking dish, spread evenly over bottom of dish.

4Sprinkle diced sundried tomatoes over potatoes, then layer chopped fresh spinach leaves, chopped precooked turkey bacon, sliced mushrooms, and shredded sharp cheddar.

5Sprinkle with Salt and Pepper.

6In separate bowl, scramble eggs with hot sauce, pour egg mixure over shredded cheese.

7Bake 45-60 minutes, fresh vegetables will produce more liquid and require longer baking time.
