Ingredients
- 6 slc Rindless, streaky bacon, diced
- 1 x Potato, cooked and diced (90 g)
- 1 x Red chilli, deseeded and sliced (optional)
- 6 x Large eggs Salt and black pepper to taste
- 4 x Chapatis
- 100 gm Cheddar cheese, grated
Directions

1COOK bacon till almost crisp.

2Add in diced potato and chilli, if using, and fry until light brown.

3Drain out excess fat.

4Beat Large eggs with four teaspoon cool water.

5Pour over the potato and bacon in the pan.

6Cook till the Large eggs are just set but still moist.

7Meanwhile heat chapatis in microwave or possibly over low heat.

8Remove and spoon on the filling.

9Sprinkle with cheese.

10Fold the chapati into an envelope shape, wrap in greaseproof paper and serve.

11NOTES : Fried bacon and potato slices, topped with egg and wrapped in chapatis
