- 1 graham cracker pie crust
- 2 c. low-fat cottage cheese (1 pt.)
- 4 eggs
- 1 Tbsp. vanilla
- pinch of salt
- 1 to 2 tsp. artificial sweetener
- 1 to 2 tsp. lemon juice
- grated lemon rind (optional)
Directions

1Put cottage cheese, eggs, vanilla, salt and sweetener in blender.

2Whirl at high speed until smooth and creamy.

3Pour into shell and bake in preheated 275° oven for 1 hour.

4Turn off oven and let cheesecake cool in oven for 1 hour.

5Cover and chill before serving.

6One-fifth slice = 108 calories.

7For fun sometime, add a small can crushed pineapple, well drained.

8Omit lemon juice.
