  • 2 eggs
  • 1 vegetables
  • 1 meat
  • 1 potato
  • 1 cooking spray
  • 1/4 cup cheese
  • 1 scallion
  • 1/2 tsp italian seasoning
  • 1 pepper

Directions

    Preheat oven to 350F.

    Spray 2 ramekins with cooking spray.

    Pack shredded potatoes or store bought hash browns in bottom of ramekins and bake for 10mins.

    Meanwhile sautee your choice of meats and vegetables with Italian seasoning and place over hashbrowns after the potstoes are slightly browned.

    Sprinkle cheese on vegetables/meat and then crack an egg on top and salt and pepper.

    Place back in the oven for 8 minutes or until the eggs are the desired consistency.

    Sprinkle one scallion over the cooked egg (optional).
