- 1 vegetables
- 1 meat
- 1 potato
- 1 cooking spray
- 1/4 cup cheese
- 1 scallion
- 1/2 tsp italian seasoning
- 1 pepper
Directions

1Preheat oven to 350F.

2Spray 2 ramekins with cooking spray.

3Pack shredded potatoes or store bought hash browns in bottom of ramekins and bake for 10mins.

4Meanwhile sautee your choice of meats and vegetables with Italian seasoning and place over hashbrowns after the potstoes are slightly browned.

5Sprinkle cheese on vegetables/meat and then crack an egg on top and salt and pepper.

6Place back in the oven for 8 minutes or until the eggs are the desired consistency.

7Sprinkle one scallion over the cooked egg (optional).
