Ingredients
- 2 c. potatoes, raw and shredded
- 2 c. chopped broccoli, raw
- 1/2 c. diced onion
- 1/2 c. chopped green pepper
- 2 Tbsp. butter flavored Crisco
- 6 eggs, beaten
- 1/4 c. Parmesan cheese
- 1/2 tsp. basil
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/4 c. water
Directions

1Mix together potatoes, broccoli, onion, green pepper and butter in skillet.

2Cook spuds in butter until tender.

3Add onions and peppers; cook until onions are tender.

4Add broccoli; cover and cook on low for 5 minutes.

5Add to mixture eggs, Parmesan cheese, basil, salt, pepper and water.

6Cover and cook on low for 10 to 15 minutes (until edges are set).

7Sprinkle 1/4 cup Monterey Jack cheese on top (optional).

8Take off heat; cover and let set for 5 minutes.

9Serve.
