- 5 Tbsp. shortening
- 1/2 c. sugar
- 1 egg, separated
- 1 1/2 c. flour
- 2 1/4 tsp. baking powder
- 1/4 tsp. nutmeg
- 1/2 c. milk
- 1/4 tsp. salt
Directions

1Cream shortening.

2Add sugar gradually and cream until fluffy. Blend in egg yolk and mix well.

3Sift flour, baking powder, salt and nutmeg together.

4Add to creamed mixture, alternating with milk.

5Fold in beaten egg white.

6Pour into greased muffin pans, filling half-full.

7Bake at 350° for 20 to 25 minutes. Makes 12 muffins.
